Tonight I set out to make a fruit cobbler and decided to try something new. Thinking outside the box, I came up with this delicious recipe for what I call a Fruit Crumble Cake!! 😄

Ingredients

  1. Cake ingredients
  2. 1mango, peeled
  3. 1fuji apple, peeled
  4. 1 largepeach, peeled
  5. 1/4 cupdark brown sugar
  6. 1/4 cupgranulated sugar
  7. 2 tbspwater
  8. 1/4 tsplemon zest
  9. 1 cupall-purpose flour
  10. 1 1/2 tspbaking powder
  11. 1/3 cupdark brown sugar
  12. 1/2 tspground cinnamon
  13. 1/4 tspChinese 5 spice
  14. 1/4 tspsalt
  15. 3/4 cupmilk
  16. 1/3 cupvirgin coconut oil, melted
  17. almond crumble crust
  18. 2 tbspcold unsalted butter
  19. 2 tbspdark brown sugar
  20. 1/2 cupall-purpose flour
  21. 1/4 cupraw almonds

Cooking Instructions

    Preheat oven to 375°F.

    Take mango, apple, & peach and slice into half moon strips.

  3. 3

    In a large saucepan on medium high heat, add below sugar amounts and water to create a syrup.

  4. 4

    Once sugar has liquefied add sliced fruit, and lemon zest and cook for 5 minutes.

    Pour fruit and syrup into a 9x9 baking dish.

    In a large bowl combine flour, baking powder, brown sugar, cinnamon, Chinese 5 spice, salt, milk, and coconut oil.

    Whisk ingredients together until batter is thick and smooth.

    Pour batter evenly over the top of the fruit in the baking dish. Use a spatula to smooth batter out.

    Place cake in the oven and bake for 30 minutes.

    Meanwhile, using a high power blender, blend almonds together until it is at your desired crumble.

    Add flour, brown sugar, butter, and crumbled almonds to a mixing bowl. Using your finger rub and squeeze ingredients together until it forms desired crumble topping.

    After cake has been baking for 30 minutes, remove from oven and sprinkle almond crumble crust evenly topping the cake.

    Place cake back in the oven and bake for another 15 minutes.

    Remove cake from oven and let cool for 5 minutes, and serve! FYI, it goes great with coffee! 😍
