I've used only potatoes for the stew but you don't have to be restricted only beef and potatoes. You can use carrots, tapioca, squash or any vegetable you wish to use. I like my stew thick and I like using spices to give it a little Indian 😉

Pumpkin leaves have their own flavour and texture. I simply love this Zambian style pumpkin leaves curry. It is prepared using very basic ingredients yet is so tasty that I cannot describe it properly. It is prepared using pumpkin leaves, tomatoes, salt and groundnut powder. This curry is served with nshima which is basically steamed maize flour without any spices.#MSR#cookpadindia
