#HealthyResolutions - The consumption of celery has a lot of health benefits. It provides dietary fiber, boosts in weight loss and digestion. It is a very good sauce of antioxidants, vitamins and minerals. It also helps in lowering high cholesterol, inflammation and high blood pressure. So how about having it in a soup form? It simply tastes delicious. Cream can also be added to enhance the flavour. But if you are calorie conscious, it can easily be avoided.

I have used oats to thicken it, but you can go ahead and try out with potatoes or whole wheat flour too. Another variation, it can also be prepared with milk. In that case, reduce the quantity of stock to 3:2 and enjoy this amazing soup for a light meal along with bread croutons.

Ingredients

  1. 3-4 stalkscelery, chopped
  2. 1large onion, chopped
  3. 3-4garlic cloves, chopped
  4. 3-4 cupschicken stock / water
  5. 1 tbsp.oats
  6. 1" cinnamon stick
  7. 2bay leaves
  8. to tastesalt and pepper
  9. 1 tsp.olive oil
  10. 1 tsp.butter (opt)
  11. celery leaves to garnish

Cooking Instructions

    Heat oil in a pan and temper with bay leaves and cinnamon. Then add the garlic cloves and saute till it changes colour. Now add the onion and celery and fry till translucent. Switch off the flame.

    Add the oats, salt and pepper and pressure cook in 3-4 cups of chicken stock / plain water for 3 whistles. When cool, discard the bay leaves and cinnamon and blend in the mixie.

    Add more water accordingly, if you desire a thin consistency. Serve, garnished with butter and celery leaves.
