Coconut Cookie Slice with Jam

Ingredients

  1. 90 gButter
  2. 110 gCaster Sugar
  3. 1Egg
  4. 135 gFlour
  5. 1/2 tspBaking Powder
  6. 1 tbspCustard Powder
  7. 60 gJam
  8. For Coconut Toppings
  9. 2Eggs
  10. 50 gCaster Sugar
  11. 150 gDesiccated Coconut

Cooking Instructions

    Beat Butter, Sugar and Egg in a small bowl until changed to a lighter colour.

    Stir in sifted Flour, Baking Powder and Custard Powder.

  3. 3

    Spread the batter over a tray (don't forget to lay a baking paper over the tray) bake in a moderate oven (180 C) for 15 minutes. Stand in pan for 15 minutes.

    Now spread biscuit base with jam, sprinkle Coconut topping over jam. bake again in moderate oven for 20-25 minutes. cool in pan, before cutting.
