Jini Dosa is one of the popular streetfood in Mumbai.
It is a fusion dish of Dosa(south Indian cuisine).. spread with garlic chutney and loaded with veggies, dry potato subzi and red chilli sauce & garnished with cheese.

Cooking Instructions

First prepare garlic chutney..add all mentioned ingredients for making garlic chutney in mixer jar, grind it,add enough water and grind again to make smooth chutney. Remove it in bowl and keep aside.

Now prepare dry potato subzi..in kadhai add & heat oil,do tempering of urad dal,saute for few minutes,as it turns pinkish add mustard seeds and cummin seeds,add tumeric powder and asafoetida,add chopped onion and saute till translucent. Add green chillies-ginger paste,mix and add mashed potatoes mixture and salt to taste,mix well. Off the flame. Keep aside.

Now in mixing bowl add shredded cabbage,grated carrot, chopped onion and capsicum,boiled peeled & grated beetroot. Mix & make 4 parts and keep aside.

Heat non stick dosa tawa for few minutes on medium flame. Sprinkle oil and wipe the tawa with tissue paper. Keep the flame low. Now pour 1 cup dosa batter in middle of tawa,with smaller katori,make Dosa in circular motion from centre towards the edges of tawa. Sprinkle 1 tbsp melted butter all over.

After one minute as above dosa layer get dry,apply 3-4 tbsp of prepared garlic chutney. In middle of it place 1 portion of mixed vegetables,on it put laddle full of dry potato subzi,with the help of flat spatula spread this mixture all over the dosa.

On it spread red chilli sauce and sprinkle 1 tbsp melted butter and cook till lower side of prepared dosa turns golden and crispy.

Roll the prepared dosa. Cut into 3-4 equal portions. On it you can grate cheese and serve. Similarly prepared all Jini dosas.

Serve/ Relish Hot Nutritious Jini Dosa with coconut chutney.

Neer Dosa Neer Dosa
The literal translation of Neer Dosa is “Water Dosa” in Kannada! Since my maternal family is from Mangalore, we used to have Neer Dosas during our childhood vacations in Mangalore and even get bored of it! But later when I had to make it myself and it didn’t ‘seem’ easy, I was missing and craving for it!!The batter for this dosa is very runny made of only Rice and water blended together; and salt of course. It is so light, that you can go on eating and never get full. At least that is the case with me, more so since I was not making this dosa as a regular item on my menu until I mastered it. I took some time to perfect Neer Dosa, not because it is difficult but because of the hype on how it requires a knack and special way of pouring the runny batter on to the tawa/griddle. My aunt is an expert in Neer dosa, she post graduated in Neer Dosa and can make these dosas even on a bad day in the kitchen.. what does that mean? I don’t know. Whenever I visit her, she makes sure I am stuffed with enough Neer dosas and it always ends in how to make it like her, so soft, yet crispy and amazing. Hence I watched it first hand at her place and finally decided to throw out all inhibitions away and started myself. And it came out very well. Guess we just need to take the first step!!
