Arabic sweet. It's a pancake stuffed with walnut and then coated with sugar syrup. Being in middle eastern country from paste 03 years, I have developed taste for Arabic food. Have been trying various dishes and have fallen for many like falafel and Hummus. But this particular dessert filled with delicious flavours had my heart forever.

Ingredients

  1. 1 Cup: All Purpose Flour / Maida
  2. 1/4 Cup: Semolina/Suji
  3. 1 Cup: Sugar
  4. 1/2 Pack: Instant Dry Yeast (4 Gms)
  5. 1/2 Cup: Wallnuts Chopped
  6. 1/2 tbsp: Baking Powder
  7. 2 tbsp: Pistachios powder (for garnish)
  8. 1 Cup: water
  9. 1/2 tsp: Rose water
  10. 1/2 tsp: Orange Blossom Water
  11. 8-10: saffron strands
  12. 1/4 cup: oil

Cooking Instructions

    Take 1/4 cup lukewarm water and add yeast and 1 tsp sugar and set aside to activate.

    In another bowl add flour, semolina, 3-4 tsp sugar, baking powder and add the activated yeast mix.

    Add 1 cup water and mix well. Cover and let it prove for 1 hour.

    Now on a flat pan pour little batter and make small pancake. There will be bubbles. Let it cook on low untill the top is dry.

    Don’t flip cook just one side. And keep it covered and at distance(dont stack them) on a plate.

    Let them cool (but keep them covered). Now add 2 tbsp sugar in chopped walnuts and stuff each pancake with wallnuts and seal the ends to make a half circle.

    A shallow pan fry the stuffed pancakes until golden and crisp. Set aside.

    Now for sugar syrup.
    In a pot take 1/2 cup sugar, 1/2 tsp lemon juice and 3/4 cup water. Boil untill sugar dissolves. Boil for another 5-6 minutes and let it cool. I have added #rosewater and #saffron strands in it for flavour. Orange blossom goes well with it.

    Now pour sugar syrup on fried qatayef and garnish with chopped pista. Serve hot.
