作り方

Warm up an oven to 160℃ with hot water in a baking tray.

Put milk, cream and vanilla into a pan, warm to 40℃.

Strip off a shell of vanilla , put the beans out and mix.

Put yolks and 30g of sugar into a bowl, beat them well.

Beating throughly, it become whitish.

Pour warmed milk slowly into the bowl of eggs and mix well.

Pour the mixture into 2 cocottos.

Bake them in an oven with hot water on a baking tray 1 hour.

After baking, spinkle *1 teaspoon of sugar one by one.

Grill them with a burner until the sugar melt and brown.

Cool the cocottos and wrap them in plastic wrap.

Keep them in a
refrigerator.

The point is 'caramelize the sugar with fish burner or gas burner at one go'.
