Carrot Tuna Salad

Carrots are a good source of several vitamins, especially vitamin A (from beta carotene), K1 (phylloquinone), and B6. To absorb more of the beneficial nutrients, especially beta-carotene, dress with a creamy champagne vinaigrette with additional protein from the tuna :-)

Use a box grater to shred the carrots.

Combine all dressing ingredients in a large mixing bowl.

Add carrots, tuna, and parsley. Mix well to combine.

Taste, adjust with salt and pepper as needed.

Let it chill in a fridge 30 mins before it's served.
