"Hydrox" Muffins

Sandwich cookies a popular topping and ingredient for baking. For this recipe I used the "Hydrox" style sandwich cookies for double the chocolaty flavor and texture :-)

Preheat the oven to 425F.

Line a muffin pan with paper liners.

In a medium bowl, whisk flour/baking powder & soda together.

Whisk cocoa powder in a large heat safe bowl.

Pour milk into a microwave-safe cup.

Nuke for 1 minute at 700W.

Add hot milk and whisk until combined.

Whisk in sugar/oil/sour cream/egg/vanilla/salt to combine.

NOTE: Whisk well each time when you add the ingredients.

Add dry ingredients and whisk until just about combined.

Add cookies, use a spatula to gently fold until combined.

Divide the batter evenly between the muffin cups.

Top muffins with the rest of the chopped cookies for garnish

Bake for 5 mins at 425F, then reduce to 350F.

Continue baking for about 15-17 minutes.

NOTE: Test with a toothpick. It should come out clean.

Remove from the oven, let them cool in the pan for 10 mins

Transfer the muffin to a wire rack to cool it completely.
コツ・ポイント
Adding hot milk to the cocoa powder makes it "bloom" and brings out a rich and deep flavor.
