Creamy Alfredo Pasta

Traditional Alfredo is made with only 3 ingredients: fettuccine, butter, and cheese combined with starchy pasta water for emulsification to create a glossy/creamy sauce. When the dish made its way to the US, US butter wasn't as rich as Italian butter, so the American adaptation often uses heavy cream :-)

Bring to a boil in a large pot of water. Add pasta and cook.

Reduce pasta cooking time by 1min so we FINISH it in the PAN

Meanwhile, melt the butter in a large pan over medium heat.

Add garlic and cook until its fragrant.

Stir in heavy cream and bring to a simmer.

NOTE: Avoid bringing to a boil.

Add cheese and stir until the cheese is melted and thick.

Transfer pasta and add parsley. Toss well to evenly combine.

NOTE: Heat to medium low when you toss to coat with sauce.

Serve with extra cheese and freshly ground black pepper.
