Trim the root end and slice each head in half lengthwise.

Then slice the halved bok choy lengthwise one more time.

Fill a bowl with water, and submerge the bok choy.

NOTE: Let the grit loosen up to help remove it from them.

Rinse each piece thoroughly under cold running water.

Slice off the base and the separate the leaves. Set a side.

Combine all the broth ingredients in a small Dutch oven.

Set to medium heat and bring to a simmer.

Add beef and cook until heated through.

Tear the tofu into a bite-size chunk then add to the pot.

Bring it a simmer and cook for 5 minutes.

Add bok choy stems, place the leaves over it.

Cover and cook for 10 minutes.

Tearing tofu by hand to creates rough and uneven edges to help hold on to broth and flavor.
