Ingredients

  1. 2kgs pumpkins-i used 3 medium sized ones
  2. 150 gpotatoes"-about 5 medium sized
  3. 1 bunchspring onion
  4. 2 tablespoonsbutter
  5. 1leek optional
  6. to tasteSalt
  7. 1 teaspoonspice of choice I used nutmeg

Cooking Instructions

  1. 1

    Peel and remove the seeds from the pumpkin

  2. 2

    Put the peelings and the seeds in a large pot with water and simmer for 30 minutes to make stock

  3. 3

    In the meantime dice the onion and leek,peel the potatoes and dice them

  4. 4

    When the stock is ready drain into a sieve and remove the seeds

  5. 5

    Sautee the butter,onion and leek in a pan

  6. 6

    Add the pumpkin and potatoes

  7. 7

    Put all your stock,season with nutmeg and salted

  8. 8

    Simmer till the pumpkin and salt are ready.then blend recheck the seasoning and serve enjoy
