Simmered Beef and Burdock Root

This is a great dish to make if you've got some beef on the verge of going bad.
Start off with 30 ml each of mirin and soy sauce. Add more if necessary while checking the taste. Recipe by Dannasamaharyourinin
Cooking Instructions

Cut the burdock into thin strips and the meat into bite-sized pieces. Heat the broth ingredients in a saucepan. As the broth begins to simmer, add julienned ginger.

As soon as the pot comes to a boil, add the beef and burdock. Reduce to medium heat and cover the saucepan while boiling.

As the broth boils away, scoop up the flavor from the bottom and mix well. Boil until the stock has evaporated.

Added 11/21/2010 - The burdock can be cut into thin diagonal strips, or sliced with a peeler. Try to cut it the same thickness as the beef.
