Break eggs. Just one egg is enough for one large plantain.

Spice eggs with seasoning, salt, curry, thyme, a dash of black pepper, ginger and cloves. You can also add scotch bonnet pepper if you want it hot and spicy.

Dip the fried plantain in the egg mixture and fry again.

There was a time when flourless recipes were trending the internet. The most famous among all of them is flourless pancakes. The original recipe calls for bananas and eggs only. So I tried the recipe but ended up with scrambled banana eggs. So it tweaked the recipe with the addition of almond flour and some spices. Aside from that I switched from bananas to plantains because I found that plantains have a better flavour and it's more fragrant than the ordinary bananas. With the addition of chocolate chips, it just makes the recipe more indulgent. But it's totally up to you you could put peanut butter or berries to the mix. I hope that you would try my recipe.
