Cooking Instructions

Prepare the mince stew first by chopping all vegetables into small cubes

Fry onions and cook till they soften, then add ginger garlic paste and cook till fragrant

Add mince stew and salt n pepper, and cook on low heat till most water evaporates

Meanwhile, boil some water, salt it and add the cubed potatoes, cook till fork tender and strain. Set aside

Add vegetables- carrots and celery and cook with a little water for 10 minutes. The veges should still be firm because they finish cooking in the oven.
While cooking, Mash potatoes till smooth - 6
Add tomatoes and peppers and cook for 2 minutes then add all spices and cook for 10 minutes

Add frozen peas and cook for an additional 10 minutes. Preheat oven to 180°C

Melt butter in the pan used for boiling potatoes and mix in the milk on low heat. Slowly add in the potatoes and mix till smooth

Layer the mince stew on a rectangular baking dish then add the potato Mash on top

Put in oven and cook for 15 minutes then layer cheese on top and cook 5 minutes

Serve hot

I have been using this recipe for years. It is very simple and has been passed down on my Irish side. This year, I was able to make it using actual ground lamb. There is the debate that if it does not have lamb, then it cannot be called Shepard's Pie. It is actually called Cottage Pie.As with the gravy vs sauce debate among Italian Americans, I could really care less. Make it however you like. I have used real potatoes and fresh peas & carrots. That is the best way to go, but when you are short on time this is perfectly fine. My wife used ground turkey and sweet potato once and it was delicious.Make this recipe your own. For mine, I usual cheat and use frozen peas & carrots and instant mashed potatoes. You can use what you have.Enjoy! J.A.B. -
