Ingredients

6 servings
  1. 1 cupflour
  2. 1 teaspoonbaking powder
  3. 1/2 teaspoonbaking soda
  4. 2eggs
  5. 1 cuppitted dates
  6. 1/2 cupvegetable oil
  7. 2bananas (optional)
  8. 1/3 cupmilk
  9. Note 1 cup = 250 ml

    Sieve the flour, baking powder and baking soda together and set aside.

    In a blender, add the dates, eggs, vegetable oil and bananas. Blend until smooth.

    Pour the blended mixture in a bowl then add the vanilla and milk. Then pour in the dry ingredients a little at a time and gently incorporate it until a smooth batter has been achieved.

    Pour into a pan lined with parchment (baking) paper then bake in an oven until done (check by placing a knife or skewers in the middle of the cake and if it comes out clean, the cake is done).
