Creamy loaded ham and potato soup with bacon

  1. 3-1/2 cupscubed russet potatoes (about 2 large)
  2. 1-1/2 cupscubed ham (I use brown sugar ham)
  3. 1/2 cupcelery chopped finely
  4. 1/2 cuponion chopped finely
  5. 4 cupschicken broth
  6. 1 cupsour cream
  7. 1 cupcheddar cheese
  8. 1 pkgbacon
  9. 1 tbspchicken bouillon
  10. Salt to taste
  11. Pepper to taste
  12. Roux
  13. 1/4 cup+ 1tbsp flour
  14. 5 tbspbutter
  15. 2 cupsmilk
  16. Topping
  17. Chives

Cooking Instructions

    Cook bacon according to the package (crispy). Allow to cool, then crumble.

    In a large pot, combine potatoes, ham, celery, onions, and chicken broth. Add salt and pepper to taste. About 1tsp of salt. Add chicken bouillon. Bring to a low boil and cook over medium heat until vegetables are fork-tender, 10 to 15 minutes.

    Make the roux
    In a medium saucepan, melt butter over medium heat and whisk in flour. Cook, stirring constantly until flour is golden, about one minute. Slowly add in milk, continuing to stir so that no lumps and cook until mixture is thick, about 5 minutes.

    Combine
    Pour flour and milk mixture into the soup and stir.

    Turn oven to low, add cheese, bacon and sour cream. Mix until smooth.

    Top with more bacon and chives if desired, serve and enjoy!
