Bacon and Egg Pie

Cooking Instructions

Preheat oven to 200°C. Grease a 30cm tart pan.

Cook diced bacon. Then mix with sour cream, parsley, paprika, salt and pepper.

Spread onto pastry. Make 4 indentations with a spoon. Carefully break the eggs into the indentations. (Breaking one egg into a small cup and pouring into indentations one by one works more easy) Bake about 20 min until eggs are set. Serve immediatly.

I had leftover frozen pastry, so I made this pie for dinner.It's easier to make if you prepare the pastry on parchment paper and then place it on a baking tray as-is. This way, it won't stick. To be honest, I was going to make some empanadas, but I started doing some silly things since I got this mixer for Christmas. I ended up making dough and thought a pot pie would be better. I’m not going to lie, I thought I ruined this in the last stages... but remarkably, it came out reasonable. (If using a cast iron skillet, I would recommend increasing the crust measurements by 50%. Bacon and Spinach Quiche Bacon and Spinach Quiche
I wanted to serve something like this for brunch. I made mine easily with frozen puff pastry.It's easier if you bake the puff pastry on the day before making the quiche. I recommend using a chunk of cheese; preferably parmigiano reggiano or comte! It really makes it different from when you use store-bought grated cheese or easy melting cheese.
