You can add anything to these you like. Fruits, other meats, the possibilities are endless. Adding cheese to the mix would be great. Unfortunately, I am dairy free until my son has weaned.

I didn't include a tortilla recipe because they are so easy. Flour, oil, salt, baking soda and warm water. That's it.

Simple Fried Empanadas

Ingredients

  1. 1 eachFlour tortilla (homemade)
  2. 1 lbGround Beef
  3. 1 cupChopped Onion
  4. 1 cupPeas
  5. 1Seasoning
  6. 1 1/2 cupSalsa
  7. 1Cooking Oil

Cooking Instructions

    Brown the ground beef and add the peas and onions when almost finished.

    Mix in salsa and seasonings.

  3. 3

    Heat oil until shimmering.

  4. 4

    Roll out dough into 4" rounds. Add a scoop of beef mixture. Fold into half moon shapes and press along edge with fork.

    Carefully place beef/dough pouch into hot oil. Let cook about 2 minutes until brown then flip.

    Remove once both sides are golden brown. Cool and drain on a paper towel.

    Serve with salsa and sour cream.
