This cookies are very easy and make a great accompaniment for tea and milk. They are not overly sweet, which I like.

Ingredients

40mins + prep
  1. 1/2 cupmargarine or butter
  2. 1/2 cupshortening
  3. 1large egg
  4. 1/2 teaspoonvanilla essence or grated lemon/orange zest
  5. 1/2 teaspoonbaking powder
  6. 1/2 teaspoonbaking soda
  7. I cup sugar (plus additional 2 tablespoons for sprinkling)

Cooking Instructions

    Cream the sugar, shortening and margarine/butter until fluffy.

    Add the vanilla or zest(whichever you are using)

  3. 3

    Add egg, beaten separately.

  4. 4

    Sift flour,baking soda and baking powder together and add to the mixture.

  5. 5

    Mix until you have a soft dough, now make small coin sized disks

  6. 6

    Bake in preheated oven at 180 degrees for 25mins.

  7. 7

    Sprinkle with sugar while still hot. Let cool and enjoy.
