Cooking Instructions

Cook noodles for 2 minutes so that it is aldente. Sieve to remove liquid

To make dressing add peanut butter, soy sauce, vinegar and brown sugar in bowl and whisk until come lately combined. Add to cooked noodles

Mix evenly and serve immediately

Thai ' Som tam' and Vietnamese 'Goi du du' are similar. In my opinion Goi du du is slightly milder. The mint makes this dish very refreshing too. Som tam has dried shrimp, but there are none in Goi du du.Palm sugar gives an authentic flavour to the sauce, but if it is not available, use sugar. If you are using fresh coriander and mint leaves, add them to the salad. If they are not available, add dried ones to the sauce. Just add a few leaves to enjoy the nice Asian flavours in this dish.
