Oil-free Vietnamese-style Dressing

Thai ' Som tam' and Vietnamese 'Goi du du' are similar. In my opinion Goi du du is slightly milder. The mint makes this dish very refreshing too. Som tam has dried shrimp, but there are none in Goi du du.

Palm sugar gives an authentic flavour to the sauce, but if it is not available, use sugar. If you are using fresh coriander and mint leaves, add them to the salad. If they are not available, add dried ones to the sauce. Just add a few leaves to enjoy the nice Asian flavours in this dish. This salad should be made with green papaya, but it is difficult to get.   • 1 tspPalm sugar (soft brown sugar or honey)
  • 1 tbspWater
  • 1 tbspLemon juice
  • 1as required Coriander leaves
  • 1as required Mint leaves

    Combine all the ingredients and it is ready. Adjust the amount of sugar and vinegar to taste.
