Turiya Patra nu Shak is one of my favorite shak or sabji. It is traditional Gujarati shak or sabji. Gujarati wedding is incomplete without this Shak. The main ingredient of this dish is ridge gourd (Turiya) & Steam Patra. It is simple to make and very delicious. It is served with poori, fulka rotli or bajra na rotla.

Ingredients

45 Minutes
4 servings
  • A) For Patra
  • 4-5Patra leaves
  • 5 tbspGram flour (Besan)
  • 1/2 tspcumin powder
  • 1/2 tspcoriander powder
  • 1/2 tspgaram masala powder
  • 1 tspred chilli powder
  • 1 tspsugar
  • 2 tbsptamarind pulp
  • to tasteSalt
  • Pinchbaking soda
  • 1 tspoil
  • 1 tbsplemon juice
  • B) For Shaak/Sabzi
  • 2 cupridge gourd (turiya)
  • 2 tbspoil
  • 1/2 tspcumin seeds
  • 2-3dry red chilles
  • Pinchasafoetida
  • 1/2 tspginger paste
  • 1 tspGreen chilli paste
  • 1 tspred chilli powder
  • 1/2 tspcumin powder
  • 1/2 tspcoriander powder
  • 1/2 tspgaram masala powder
  • to tasteSalt
  • as neededWater
  • 1 tbsplime juice
  • Handfulcoriander leaves
  • 1/3 cupdry fruits (cashews and raisins)

Steps

45 Minutes
  1. 1

    Take a bowl & add gram flour into it.

  2. 2

    Add cummin powder, coriander powder, red chilli powder, garam masala powder, sugar and salt.

  3. 3

    Add tamarind pulp, lime juice and oil.

  4. 4

    Mix all ingredients well.

  5. 5

    Add baking soda and mix it.

  6. 6

    Add water if required.

  7. 7

    Make thik batter.

  8. 8

    Now take Patra leaves & cut the veins (nas) of it.

  9. 9

    Take one tbsp batter and spread on leaves.

  10. 10

    Put another Patra leave on it and again spread the mixture.

  11. 11

    After that roll it.

  12. 12

    By using same steps do it for remaining Patra leaves.

    Now cut it into Patra shape.

    Now take a pan and heat oil.

  15. 15

    Add cummin seeds and let it crackle.

  16. 16

    After that add asafoetida & dry red chilles.

  17. 17

    When chilli change the colour add chilli paste and ginger paste into it.

    Saute it.

  19. 19

    Now add dry fruits and let it cook for 1/2 minute.

    Add chopped ridge gaurd into it and mix it.

  21. 21

    Now add cummin powder, coriander powder, garam masala powder and salt.

    Mix it well.

    Add 1/2 cup water & bring it to a boil.

    After that add cut Patra.

  25. 25

    Gentaly mix it.

    Cover the pan and cook it for 15-20 minutes.

    Check in between and mix it.

    After that check using knife Patra is cooked or not.

    If not then cook it again for 5-10 minutes.

    Add water if require.

    Now add lime juice and mix it well.

    Add coriander leaves and mix it.

    Now turn off the flame

    Serve hot with poori, phulka rotli or bajra na rotla.

    Turiya Patra nu shak is ready to be serve.
