Ingredients

  1. 1 cupquinoa, rinsed
  2. 1 tbsplemon juice
  3. As requiredOlive oil
  4. to tasteSalt
  5. 1 3/4 cupswater
  6. 1 cupfresh parsley, chopped
  7. 1/2 cupfresh mint, chopped
  8. 1 cupcherry tomatoes, chopped
  9. 1/4 teaspoonblack pepper
  10. 1 tbspchopped garlic

Cooking Instructions

    Bring quinoa, 1/2 teaspoon salt, and 1 1/4 cups water to a boil in a medium saucepan over high heat.

    Remove from heat and let stand, cover for 5 minutes. Prick with a fork.

    Meanwhile, whisk lemon juice and garlic in a small bowl. Gradually whisk in olive oil. Season dressing to taste with salt and pepper.

    Let the quinoa cool, then add tomatoes, herbs and dressings.

    If you have time, cover and let the salad chill in the refrigerator for a few hours or overnight
