In recipes I have, a lot of oil is usually used such that It was more of 'deep frying'.
I thought that was necessary to get the omena crunchy. I have since realized you can vastly reduce the oil n extend cooking time to get the same crunch

Ingredients

  1. 500 gmOmena
  2. 2large onions
  3. to tastePepper n salt
  4. Cooking oil
  5. Lemon n Dhania for garnishing

Cooking Instructions

    Sort the Omena then Wash with Hot water. Instead of pouring out the water when done, use a slotted spoon to pick out the omena. Fine dust n sand will remain in the water.

    Put oil into your pan together with onions.Cook til they become translucent.

    Chop pepper, Finely grate ginger n garlic. Add to oil

    Once their essence has infused into the oil n onion, add your omena. Reduce heat and begin to stir.

    Keep stirring. If the oil reduces completely before omena is dry, you can add a tablespoon or two. NOTE that because of the garlic, the omena might stick onto the pan. Just carefully scrap off from the bottom.

    Keep stirring until dry to your taste. I like mine super crunchy. So the whole stirring business takes up to 20mins. You may need more if your omena was very fresh n therefore, wetter.

    Let cool, garnish n serve.
