Japanese soft and juicy teriyaki chicken 🇯🇵

To make the chicken soft and juicy, I’m adding some sugar when seasoning the chicken. Because sugar works as a natural tenderizer! I learned this tip from Cookpad Japan author.😊

Mix all the ingredients for the teriyaki sauce in a small bowl.

Cut chicken thigh in bite pieces, sprinkle sugar, salt and pepper. Mix with grated garlic too. Leave it for 5-10 mins.

Coat the marinated chicken with corn starch.

Heat some oil in a pan and start frying under the medium heat. Do not move much until you turn them over.

Once one side becomes crispy brown, turn over the chicken.

When both sides are well cooked, add the teriyaki sauce and coat all the chicken. Make the sauce thicker and remove from the heat before getting burnt.

Cut some leek and sprinkle on top. Enjoy!

Having lived in Singapore for around 10 years, Hainan chicken rice is one of my most favorite dishes of all! ❤️I’m always missing the taste in local hawker center, especially Tian Tian in Maxwell food court. My recipe is still very far from that authentic professional level, but I’m confident that this is delicious enough to enjoy at home😁 And it’s so easy too!(You don’t need to prepare a whole chicken or boil it for few hours)Instead of using a Staub pot, you can use a rice cooker to cook chicken and rice too!As for the sauce, please try dark soy sauce if you can buy it as it usually comes together with chicken rice in Singapore. Korean yangnyom chicken is one of the most popular foods which we've seen in lots of Korean dramas. When I went to Seoul last time, I found chicken shops everywhere. There are about 36,000 fried chicken restaurants in South Korea(data as of 2016). This is more than the number of McDonald's stores worldwide!!😱💦According to my husband, who is from Korea, yangnyeom chicken is usually not a home-cooked food and people mostly buy or order from outside. However, in overseas, we cannot always find Korean chicken shops. Also, I believe that the homemade one can be a bit more healthier than the one from outside. Therefore, I searched for over 10 recipes from several sources both in Korean and Japanese and made my own original sauce🙌 My husband loved it so it must be close to the authentic one!In Korea, pickled radishes always come together with yangnyeom chicken.
