- Barramudi (medium size 1 kg or more) • corn flour or as needed - to THINLY COAT the fish • finely chopped ginger • finely chopped lemongrass (use ONLY 2 white stalks of the lemongrass) • finely chopped garlic • finely chopped bird eye chilies • fish sauce • grated palm sugar - heaped, be generous (around 40 grams) • baby spinach • corn flour + 1/3 cup water = mix to make slurry to thicken the sauce. Consistency of the beans is up to personal preference. Adjust your liking. For dipping, we love it slightly thick. Add less or more liquid to your desired thickness • . Cold bean thickens. Add extra liquid of your choice when reheating. Remember to stir or whisk so the solid and liquid mix well • . Spices!!!!! Add cumin ground or cumin powder if you like. Sprinkle some dried herbs 🌿 of your choice. Add some heat (chopped jalapeños or chili flakes). It's optional •

We usually buy bulk, wash and then dry them before placing them in zipped bags and freezer. Frozen jalapeño is easy to dice finely • . We always use 1 big jalapeño. Adjust heat to your liking • . Cilantro can be substituted with mint leaves (cilantro is coriander)

Butter should be at a cool room temperature, so it's soft enough to mix with sugar and other ingredients • . Icing sugar is also known as powdered sugar or confectioners' sugar. It creates a soft, tender, melt-in-your-mouth texture cookies • . You should not pack your measurement cup when measuring flour because it compacts the flour, leading to an inaccurate measurement that is often too much and can result in dry and dense baked goods
