Classic Aglio e olio

Classic Aglio e olio
Steps
- 1
Prep all ingredients before cooking. Crush, peel and thinly slice garlic.
- 2
Bring a pot of water to a rolling boil. Add long pasta of your choice. Add generous amount of salt. Leave it to cook.
- 3
After 3 or 4 minutes of pasta cooking in the pot, start heating a deep pan over medium low heat (❓️: We want the pasta is ready when garlic is done) Next, add olive oil 🫒.
- 4
Add garlic and sauté until there's tiny hint of golden colour. Add chilli 🌶 flakes. Stir so the garlic and the flakes well-combined. Turn off the heat immediately so the flakes won't burn.
- 5
Check the pasta. It should be cooked al-dente. Remove the pasta from the water and reserve this pasta water 💧for the sauce later.
- 6
Add cooked pasta and 1 cup of hot pasta water into the pan of garlic oil. Using a tong, continuously toss the pasta in garlic oil. Add more pasta water if you think it's a bit dry. Adjust accordingly. Then give it a taste & adjust salt as needed. Serve immediately as it is or with a sprinkle of parmesan / parmigiano. See serving ideas 💡/ suggestions.
