Im overrun with avocados from our trees!!!!!! I love avocados but even I can’t eat this many!! I needed a salad to go with lasagna but I’m fresh out of lettuce. This is delicious and cold and cuts through the richness of the pasta. The avocado dressing this combo results in makes me think I need a straw instead of a fork. It makes me want to drink it 😆

Avocado and Tomato Salad

Ingredients

  1. 1large avocado, diced
  2. 1/2large onion, diced small
  3. 1cucumber, peeled and diced
  4. Juice of one lime
  5. to tasteSalt, pepper, and garlic powder
  6. Drizzle of olive oil over top

Cooking Instructions

  1. 1

    Dice the vegetables and put them in a bowl. Juice the lime over it all and add seasonings. Drizzle olive oil. Toss gently. Refrigerate.

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
