We had these when I was growing up. Nothing authentic just tasty and really light. You can put a pan of tacos on the table and no one I know would pass up a crispy little piece of heaven. Using an upside down muffin tin to heat and serve your tacos is brilliant and NOT my idea lol

Ingredients

  1. 1 lbground beef, browned and drained
  2. 1 tspeach chili powder, cumin, dry mustard,garlic and onion powders, salt, pepper, paprika, cornstarch
  3. 1/2-1 cupwater
  4. 1/2 lbshredded cheese, I used Monterrey Jack
  5. Crispy taco shells
  6. Sour cream
  7. Shredded lettuce
  8. Taco sauce

Cooking Instructions

  1. 1

    Brown and drain your ground beef. In a measuring cup, combine all your spices and stir. Add to beef and stir. Add water and cook for a few minutes stirring.

    Heat your oven to 350. On an inverted muffin tin, line up your taco shells, 2 per row. Heat til crispy and warm. Remove from oven. Fill each shell with meat, cheese, lettuce, and sour cream, in that order. Take it to the table. The rest is history.

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
