It’s Tuesday night and The Secret of Skinwalker Ranch is on tv tonight. I literally work my week around that day😂 My mom made us taco salad on occasion. Loved that dinner! So now I do it too and it just happens to fall on the night of my fave show!

Ingredients

15 minutes
4 servings
  1. Big bag tortilla chips
  2. 1 lbground beef
  3. 1 envelopefajita seasoning
  4. 1 canrefied beans
  5. 1/2-1 cupchicken broth
  6. 1 tspSazon seasoning
  7. Canned queso, I used blanco
  8. Shredded cheese
  9. Lettuce chopped
  10. Diced tomatoes
  11. Diced onion
  12. Sour cream
  13. Guacamole
  14. Taco sauce
  15. Jalapeño

Cooking Instructions

    Brown your ground beef, drain and add fajita seasoning packet and a dash of water. Stir

    In a small pan, heat the refried beans with the broth, to loosen it up and make it easier to add to your salad. Stir in sazon seasoning and stir.

    In another sauce pan or in the microwave, heat the queso.

    Chop all your fixins. In an oven safe pan or sheet pan, heat your tortilla chips in the oven with the shredded cheese. Pull them out when heated. Add meat, beans, cheese sauce, lettuce, tomatoes, onions, sour cream, guacamole, and finish with taco sauce.

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
