Crispy on the outside and soft on the inside, here is a super easy and tasty low carb/keto eggplant dish that requires almost no prep work.
Cooking Instructions

Cut the eggplant in half lengthwise. Then, cut them into 1 1/2 inch pieces.

Put one basil leave on each piece of eggplant and wrap them with bacon. Use toothpick to secure if necessary.

Place the wrapped eggplant in the fryer basket and air fry at 400F (200C) for 10-12 minutes until the bacon is nice and crispy.
