Ingredients

  1. Yam
  2. Oil
  3. Roughly blended tomatoes, peppers and onions
  4. Chopped tomatoes, peppers and onions
  5. Seasoning and spices
  6. Eggs
  7. Sliced onions

Cooking Instructions

    Peel, wash and cut the yam. Put into a pot and add in a cup of water and bring to a boil. Drain

    Heat oil and fry the yam. Drain on paper towel

  3. 3

    For the sauce; fry the blended mixture with oil. Add in 2 tbsp of water, add in the seasoning and spices. Mix very well

  4. 4

    Add in the chopped tomatoes and co. Meanwhile whisk the eggs together with seasoning cube and onions. Add in to the pan and close. Do not turn it but reduce the flame to lowest.

  5. 5

    After 5mins, open the pan and stir. Add in the remaining sliced onions and allow to steam for few minutes and serve.
