Cooking Instructions

Slice the beef against the grain (do not slice along the grain as it will be tough). Marinate 100 grams of beef with 1/2 teaspoon pepper, 1 teaspoon oyster sauce, 1/3 teaspoon seasoning powder, 1/3 teaspoon soy sauce, 1 teaspoon shrimp chili paste, and 2 teaspoons sesame oil. Mix well. Marinate for at least 15 minutes before stir-frying. Avoid marinating beef with salt and fish sauce as it can become too salty. It's better to use soy sauce instead of fish sauce. Replace shallots with garlic if you prefer garlic.

Cut the tomatoes and onion into wedges. Slice the pineapple thickly, choosing one that is just ripe; if it's overripe, it won't taste as good when stir-fried. Choose tomatoes similarly. Cut the celery into long pieces. Today, I cleaned out the fridge, so the pineapple and tomatoes were already too ripe.

When the pan is hot, add the beef to stir-fry. Do not add oil as the marinade already contains oil. Stir-fry until slightly rare, then remove the beef. You can continue stir-frying the beef with the vegetables in the pan, but only if you're cooking a small amount; cooking a large quantity can affect the quality of the beef.

Add the pineapple and onion first, season with 2 teaspoons of oyster sauce. Mix well.

Next, add the tomatoes and onion, then turn off the heat. Stir well. Do not stir-fry the tomatoes for too long to avoid them becoming mushy. Remove the pan from the heat to prevent the residual heat from overcooking the food.
