Cooking Instructions

Mix flour, oil, salt and yeast, then make a hole in the center and pour water &milk. Gently combine and knead until soft and smooth. Oil your hands & the bowl and allow it to rise to double in size (1hr).

Make 8-10 balls of equal size. Roll each gently and brush with butter or oil then fold it over in half to form a semi-circle. Repeat to all.

Place folded pitas on a lightly floured surface and cover them with towel, leave to the rise until double in size. Heat up a pan and place them gently and cook them gently side by side. When done allow to cool and add your fillings.

This is a small batch recipe for 3 medium pita breads. The secret to getting them to puff up into pockets is a super hot oven (at least 260°C/500°F). I recommend sticking to white flour for this because it seems whole wheat flours don't do a good job of rising well (which means no pocket!).Great for falafel, or any kind of sandwich fillings you like. I was making "eterno"'s bagels and was really impressed by the idea of using a processor to make them. I wondered if it was possible to make pita bread the same way, and after much trial and error I finally arrived at this recipe.In Step 4, make sure the seams are facing up when rolling the dough out with a rolling pin. Stretch it out gently. If the dough doesn't rise enough, open it up with a knife. When using an electric oven, bake at 300℃ for best results. Recipe by Akkorin mama cookpad.japan
