Mash/blend the bananas and pour in a bowl

Add the egg and mix well,then add oil, sugar and milk. Mix properly till the mixture is well incorporated. Now sift the flour and baking powder and add in the mixture. Mix properly till its smooth. Set aside for 30 minutes.

Cook for 4minutes each side on medium heat.

We had extra bananas that didn't get eaten before starting to brown and no one in my house will eat them with brown spots. I didn't want to make banana bread again and it was breakfast time. I looked up banana pancake recipes, but they all looked so flat and dense. I also didn't want am overwhelming banana flavor which I think something that is just "bananas and eggs" would be. So, I decided to just modify my go-to pancake recipe with bananas as the base and they turned out great.On a side note, this is a great recipe to let the kids help with! My 3 year old loves spending time cooking with Mama. He feels like a real chef when he's cooking and guiding him through the measuring and mixing of ingredients while explaining what each ingredient does is a great way to teach him math and science at the same time.

I found out that they were just trying to keep the good stuff to themselves. These pancakes aren’t as sweet as they would be with banana. But honestly, they’re sweet enough. Its healthy, a combination of fruit and protein. No need for sugar since bananas are naturally sweet. You can also try adding some chocolate chips or dress them with syrup on top.They are pretty simple to make but its quite tricky especially the flipping part. I find it very important that you brush your pan with butter. Keep them small about 3inches so it would cook quickly and easier to flip. Before flipping, make sure the edges are set and the middle starts to bubble. Gently, and slowly lift half of the pancake and flip!
