Ingredients

4 servings
  1. Beef
  2. 1-1/3 poundground sirloin
  3. 1 teaspoonsalt
  4. 1 teaspoonground black pepper
  5. Pockets
  6. 1-1/2 cupall purpose flour plus extra for dusting
  7. 2 tablespoonsextra virgin olive oil for coating dough
  8. 1 teaspoonsalt
  9. 1 teaspoongranulated garlic powder
  10. 1 teaspoongranulated onion powder
  11. 1/2 cuphot tap water
  12. 1/2 cupfinely grated Parmesan cheese
  13. Wash
  14. 1egg
  15. 2 tablespoonswater
  16. As neededkosher salt for sprinkling on top
  17. 4 teaspoonshredded Parmesan cheese

Cooking Instructions

    Oil the bowl. Coat the dough and allow to sit undisturbed for about 30 minutes.

    Season the meat and form into 4 patties. While the oven is preheating to 400 degrees Fahrenheit, let the patties get to room temperature.

    Flour a surface and put the dough for the pockets on it. Divide into 4 equal amounts. Roll each one out one at a time.

    Add a meat pattie into the center and fold the dough around the patties. Set folded side down on a lined oven safe pan. Repeat till done. Mix the egg and water. Add 3 slits into top of each pocket. Brush with egg wash.

    When coated with egg wash sprinkle with kosher salt. Put into oven for 45 minutes. Check from time to time juices will build up so I had to drain the pan once.

    After 30 minutes add shredded Parmesan on top and allow to melt for about 15 minutes in oven. Serve I hope you enjoy!!!!

    The ground sirloin didn't shrink to much.
