Cooking Instructions

Bring a pot of water to a boil, add a bit of soy sauce, vinegar, and salt. Once boiling, add the pork leg and simmer until the meat is cooked through. Slice the meat into thin, bite-sized pieces.

Mince the garlic and chili (keep them separate), finely chop the pineapple, and squeeze the juice of 1 lime into a bowl. In a pan, sauté the garlic until fragrant, then add 1 tablespoon of fermented fish sauce, 2 tablespoons of sugar, and the lime juice. Mix well. Add a little water and cook until the sauce thickens slightly, then add the chili. Pour the mixture into a bowl, let it cool a bit, then stir in the pineapple.

Wash the herbs and cucumbers, cut the cucumbers into long strips. Arrange the rice paper, fresh noodles, and pork on a plate. Serve the fermented fish sauce in a separate bowl for dipping. Enjoy 😋😋😋. In the picture, there's a bowl of fermented fish sauce topped with peanuts because we had extra roasted peanuts at home, so we added them 😆. If it's over-soaked it becomes really hard to handle. Any tough bits will quickly soften, so until you get used to wrapping these spring rolls, it may be easier to handle the rice paper while it's still stiff. I love fresh spring rolls, so I make them with ingredients that we always have at my house. Using boiled eggs or shrimp turns them into colourful and gorgeous fresh spring rolls. This time I used canned young (mini) corn, but crab-flavoured kamaboko and okra taste delicious and also look beautiful when the spring rolls are sliced in half.It's quicker to rehydrate the rice paper wrappers in hot water, but if they get too soft, they are hard to handle. So I think it's better to rehydrate them in cold water until you get the hang of it to avoid mistakes. If the rice paper wrappers are still too stiff to roll, wait a little until the moisture from the ingredients soften them. They will soon be soft enough to use. For 10 rolls.
