This soup is great after a holidays when ham goes on SALE! The first ham I bought in the early 90's was on sale for .69 cents per pound, I still try and get it for that price today!

This soup is great after a holidays when ham goes on SALE! The first ham I bought in the early 90's was on sale for .69 cents per pound, I still try and get it for that price today!
Cooking Instructions

Preheat oven to 325 degrees. Cook ham for 1.5-2 hours. Let stand 30 minutes. Slice ham best you can leaving about 2 cups of meat on the bone.

Place bone in a large stock pot, add in enough water until it covers the bone. Add 1 whole onion and 2 bay leaves. Bring to a boil. Simmer for 1.5 hours.

Take out ham bone and whole onion. Add in chopped onions, sliced carrots, and sliced celery. Simmer for 25 minutes.

Add in potatoes, simmer for 35 minutes or until potatoes are fork tender. To help break up potatoes smash is the back of a large spoon or whisk.

Add in milk, garlic powder, onion powder, paprika, parsley, and real horseradish.

In a small sauce pan melt butter on medium high heat. Add in flour and stir constantly until consistency of wet sand.

Once the soup comes back to a low boil, whisk in rough. Mix occasionally for the next 10 minutes and enjoy!

This isn't the most traditional way of making ham and bean soup but still has amazing flavor. I didn't use ham hock, ham shank or bacon which seems to be common. We used a homemade ham stock that we had in the freezer made from the bone of a spiral ham. For the ham chunks I used a combination of leftover ham from a holiday meal and the last bit of the ham I smoked this past summer. If you don't have smoked ham or double smoked in my case you can use a smoked turkey leg and let it simmer in the pot. Or even a drop or two of liquid smoke just to give the extra depth of flavor. Also used the dehydrated onion in place of fresh chopped because it seemed like it would just get lost in there. The only thing I might do differently next time is add spinach or another green to the party. jason williams -
