Tried to cook Nicaragua style Rice and it turned out so well. Being Vegan couldn't add much things but with minimal options it was superb and complementary was Indian mint sauce.

Tried to cook Nicaragua style Rice and it turned out so well. Being Vegan couldn't add much things but with minimal options it was superb and complementary was Indian mint sauce.

Ingredients

20 minutes
4 servings
  1. 1 1/2 cupsuncooked rice
  2. 1 1/4 cupswater
  3. 1 cupfrozen baby sweet peas
  4. 1 cupchopped tomato
  5. 1/2 teaspoongarlic salt
  6. 1 canchopped green chiles
  7. 1/4 cupchopped red onion
  8. 2 tablespoonschopped fresh cilantro
  9. 1 tablespoonfresh lime juice
  10. 1 cupdiced carrots

Cooking Instructions

20 minutes

    Take a large saucepan,and add water to it and boil it over high heat.

    Add rice, peas, tomato, carrots, chiles and garlic salt to it and mix well and bring it to a boil without covering it.

  3. 3

    Reduce the heat to low; cover and simmer 5 to 6 minutes or until water is fully absorbed.

    Remove it from heat.

  5. 5

    Stir in onion, chopped cilantro and lime juice; cover and let stand 5 minutes. Stir well. Garnish as desired.
