Cooking Instructions

In a pot add your meat onions garlic and ginger paste thyme and seasonings and let it cook

Heat up vegetable oil and fry the meat then add your blended tomatoes habanero pepper bell peppers and onions leave it open so that it will fry not cook don't close to avoid steam going back into the pot add your seasonings and spices until oil start coming up

Add some amount of meat stock and cook for few minutes then back to our chopped vegetable leaves wash thoroughly and pour hot water and leave it for at least two minutes then remove from hot water and add to the sauce and off the flame

For the rice add water to your pot and bring to boil wash your rice and cook for about 8 minutes then parboil and put it back on fire and let cook

(Although it doesn't really live up to the original...)It is easier to eat if you alternate the fatty sides of the pork roast slices as you layer them, so that the fat does not end up in one lump. The number of slices will depend on the thickness, so adjust accordingly. I used 3 pieces for my husband and 2 for myself. Layered sliced pork is more tender and easier to eat.
