Tabouleh is a Lebanese salad with fresh parsley as the main ingredient. It is traditionally made with bulgur wheat but that wasn't readily available where I live so I used plomb couscous. This salad is refreshing and delicious.

Ingredients

  1. 1 CupChopped Parsley
  2. 1/4 CupCooked plomb couscous
  3. 1/8 CupTomatoes (diced)
  4. 1/4 CupRed Onion (diced)
  5. 1/4 CupSpring Onion (diced)
  6. 1/4 CupCucumber(diced)
  7. Fresh Mint
  8. Dressing
  9. 2 TablespoonsOlive oil
  10. Crushed Garlic as desired
  11. 1/3 TeaspoonBlack Pepper
  12. Sprinkle of Salt
  13. 1 TablespoonLemon juice

Cooking Instructions

    To make the simple dressing; combine the olive oil, black pepper, salt, black pepper, garlic and lemon juice and whisk together. Set this aside. In a mixing bowl; combine plomb couscous, parsley, tomatoes, cucumber, spring onion and red onion. Add the dressing and toss together.

    Note: Tabouleh is a Lebanese salad. It is traditional made with wheat bulgur, this wasn't readily available where I live so I used pearl couscous. You could use quinoa as well. The main ingredient for making Tabouleh is fresh parsley.
