Ingredients

1 boxgarlic couscous, prepared
2 eachcolored peppers
1 smallRed onion, chopped
4Green onions, chopped
1/2cucumber, diced
1/2 cupfeta cheese
3/4 cupkalamata olives
1 cupGreek dressing
1 pintscherry tomatoes, halved

Steps

Roast peppers at 400°F for 20 minutes or until burnt appearance. Allow to cool while chopping other veggies.

Chop veggies. For cucumbers, peel 4 lengths down the width of the cucumber before chopping.

Combine all ingredients. Chill in refrigerator.
