I love salads. Couscous is a small pasta. When I’m eating it, I don’t feel like I’m eating Pasta. Don’t get me wrong, we Love pastas.

I had some couscous salad at my favorite Moroccan restaurant. It was so delicious that I just had to ask how it was made. Here's my recreation using easy-to-find ingredients. This salad has become part of our regular menu.Make sure to mix the couscous with the other ingredients once it has been heated. These flavors my family can't deny. I do a lot of recipes with different flairs of these go to ingredients! So good!

To make a heartier salad, add one can of drained chickpeas. I prefer mint and arugula, but these can be substituted for parsley, or basil as desired.

My mom used to make this with cooked barley. I changed it up for couscous, to make nice light summer lunch or as a side dish
