My mom used to make this with cooked barley. I changed it up for couscous, to make nice light summer lunch or as a side dish

My mom used to make this with cooked barley. I changed it up for couscous, to make nice light summer lunch or as a side dish

Ingredients

  1. 2 cupcooked couscous
  2. 1/4 cupfinely diced red onion
  3. 1/3 cupdiced celery
  4. 1 1/2 cupsliced cherry tomatoes
  5. 115 oz can chick peas drained and rinsed
  6. 1/2 cuppacked chopped fresh cilantro (celery leaves or parsley can be substituted)
  7. 3 tbsplemon juice
  8. 3 tbspolive oil
  9. 2 tsptobacco sauce or to taste
  10. 1 pinchsalt/pepper to taste

Cooking Instructions

  1. 1

    In a small bowl mix hot sauce, salt, pepper, lemon juice, and olive oil set aside.

    In a large bowl combine all other ingredients

  3. 3

    Stir in sauce, let stand 1 1/2 hrs for flavours to meld
