Ingredients

  1. 428 gBaby Potatoes
  2. 1/2 CupGrated Carrot
  3. 2Boiled eggs
  4. 3 TablespoonsChopped Parsley
  5. 2 TablespoonsSpring onion
  6. Chilli Flakes as desired
  7. 1Small Red Onion (diced)
  8. Dressing
  9. 2 TablespoonsMayonnaise
  10. 1 TablespoonSalad Cream
  11. 1 TeaspoonSugar
  12. 1/2 TeaspoonBlack Pepper
  13. 2 TablespoonsMilk

Cooking Instructions

40 minutes
  1. 1

    Peel potatoes. Wash and dice into bites sizes. Cook with salt/ seasoning cube until tender. Strain in a colander and allow to cool down completely. Prepare the dressing by combining the mayonnaise, salad cream, black pepper, sugar & milk in a bowl and whisk together. Set this aside.

    In a mixing bowl; combine the cooked potatoes, carrot, parsley, spring onion, red onion & chilli flakes. Reserve a small portion of the parsley, chilli flakes & spring onion for the final garnish.

    Mix together with the dressing before adding the boiled egg. This is to prevent the eggs from getting too mushy.

    Garnish with the reserved chilli flakes, parsley & spring onion. Serve and Enjoy😍😃
