I was looking to make a potato salad that has a little extra zip to it. I wanted it to be relatively healthy, not contain any mayonnaise, and be something people would both remember and enjoy.

Ingredients

  1. Dressing
  2. 3 tbsplocal raw honey
  3. 3 tspsea salt
  4. 1/2 tspblack pepper
  5. 6 tbspred wine vinegar
  6. 2/3 cupolive oil, extra virgin
  7. 2 tbspdijon mustard
  8. 1 tbspminced ginger
  9. potato salad
  10. 5 lbpotatoes
  11. 1/4 cupfresh chopped dill
  12. 1/2 cupfresh chopped parsley
  13. 1 mediumdiced yellow onion
  14. 1/2 tspground cinnamon

Cooking Instructions

    Start boiling water in a large pot. Add salt to the water. While waiting for the water to boil, peel and chop the potatoes into 1/2 x 1 inch pieces like you would for any potato salad. Throw them into the pot after its boiling for 10 mins.

    While the potatoes boil, throw the dressing ingredients into a bowl and mix thoroughly.

    Prepare other ingredients and put into a large mixing bowl. Then check on your potatoes to make sure they're done.

    After you drain and rinse your potatoes, put them in the large mixing bowl with the other ingredients. For the dressing on top of them. Mix with a large spoon. Taste and adjust seasoning as needed.
