Spring-Coloured Sakura Matcha Latte

I bought some pickled cherry blossoms and wondered if I could use them in a drink. I used some strawberry vanilla tea leaves that were blended with matcha to make a drink a base for this recipe, replacing the strawberry with cherry blossoms. It tasted delicious.

I like the salty taste of pickled cherry blossoms so I've only rinsed the saltiness away a little bit in Step 1. If you prefer them to be less salty, please adjust the soaking time to your taste.
* In Step 3, feel free to replace the whisked tea with whipped cream if you'd prefer.

Ingredients

  1. 1blossom Cherry blossoms preserved in salt
  2. 200 mlMilk
  3. 1 tspMatcha
  4. 1heaped teaspoon Sugar

Cooking Instructions

    Place the cherry blossoms in a small dish, pour in some water, and let soak for 15-20 seconds. Set aside some of the cherry blossom for decoration (see photo) and finely chop the rest of the petals and stem.

    Put the milk, finely chopped cherry blossom, matcha, and sugar in a saucepan and warm it up until it's about to boil.

    Pour the mixture into a mug, leaving a little in the pan. Whisk the mixture that's left in the pan with a milk frother or something similar, and gently pour it on top of the mixture in the mug. Decorate the latte with the petals left over from Step 1 and it's ready to drink.

    I tried decorating my latte with a flower I made with "Salt-Cured Cherry Blossoms",. I think it looks cuter than my version.
