Ube Mochi Cake Ube Mochi Cake
Mochi cake is a Hawaiian/Japanese-American rice cake made with sweet rice flour. It is often made with red bean paste, but I used purple yam jam for my Filipino family. The cake was lighter than the one with red bean paste, and the family loved it! JunB -

Banana Chocolate Cake Baked in a Frying Pan Banana Chocolate Cake Baked in a Frying Pan
I wanted to create a low calorie cake that can be made in a frying pan using Lakanto (100% natural sweetener)! The top surface comes out crispy, with a moist cake base. It can be made in no time, so its good for breakfast or a snack.Be careful not to burn yourself when putting the bananas into the frying pan. The batter will cook evenly if spread in a thin, even layer. By using two bananas to pack the bottom of the frying pan, they won't shift as much when pouring in the cake batter. Serve with whipped cream to taste. Recipe by Ro-zuminto cookpad.japan -

Castella Cake is a very soft sponge cake that melts in the mouth and doesn't need baking powder. Ingredients and the process are very simple. You can eat it as such or use it as a base for any other exotic cake. That's why I selected this cake for heritage contest!#heritage. C Naseem A
