soak dried fruit in the 2 tablespoon flour for one hour

in a mixing bowl beat butter ,vanilla and suger for 5 minutes until creamy.

add the eggs one at a time beating well after each.

add flour ,baking powder and dried fruit and the lemon zest then beat for 2 minutes

pour the batter into the pan

heat the oven on a low temperature for 2 minutes and put thr pan

bake for about 45 _ 50 minutes on a low temperature

let cool in the pan 15 minutes before turning onto rack to cool completely
